Banana Bread
Yields 1 loaf | Prep Time: 15 minutes | Cook Time: 1 hr 5 minutes | Total Time: 40 minutes
Ingredients
2 cups organic all purpose flour
1 tsp baking soda
3/4 cup organic light or dark brown sugar
1/4 tsp salt
1/2 cup butter
2 eggs, beaten
2 1/3 organic bananas, mashed
Tips & Notes
You can add nuts or banana slice to the top of your bread prior to putting it in the oven. It gives the dish more texture and flavor.
Also save banana peels for ‘vegan’ bacon and ‘pulled pork’ recipes.
Directions
1. Preheat oven to 350°F. Grease loaf pan to prevent bread from sticking.
2. In a large bowl, combine organic flour, baking soda, and salt. In another bowl combine butter and brown sugar, then add the eggs and mashed bananas until blended. Then combine the mixture into the larger bowl with the flour.
3. Pour batter into pan and bake for 1 hr and let it cool for 10 minutes.
