Homemade Cherry Coconut Granola

3 cups oats
1/2 cup sliced almonds
1 cup raw pistachios (hulled)
1 cup raw pumpkin seeds
1 cup unsweetened dried coconut flakes
3/4 cup maple syrup
1/2 cup olive oil
1/2 cup brown sugar
2 teaspoons kosher salt
1 teaspoon cinnamon
1 teaspoon vanilla powder (or extract)
1/2 teaspoon ground cardamom
3/4 cup dried cherries
2 teaspoons flaky sea salt
greek yogurt and fruit for serving
Tips & Notes
Shop for ingredients in bulk to save waste and get the amounts you need!
Preheat the oven to 300 degrees.
Combine the oats, nuts, and coconut flakes, maple syrup, oil, sugar, kosher salt, and spices and mix well.
Spread on a baking sheet and bake for around 45 minutes, tossing every 10-15 minutes to make sure it browns evenly.
Once you remove it from the oven, stir in the dried cherries and sprinkle on the flaky salt.
Serve with greek yogurt and your favorite fruit.
Once cooled, store at room temperature in an airtight container.
