Celebrating National Pancake Day with a stack of Superfood Apple Spice Pancakes!
These pancakes are the perfect way to kick off the cozy season!

Ingredients

- 1 cup gluten-free flour (I used Bob’s Red Mill all-purpose gluten-free flour)
- 1 tbsp brown sugar
- 2 tsp baking powder
- 1 tbsp ground flaxseed
- 1 tsp hemp seeds
- 1 tsp chia seeds
- ½ cup milk of choice
- 1 egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
- Coconut oil for cooking
Apple Spice Topping

- 1 apple, diced
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- ½ tsp cinnamon
Instructions
- Make the apple topping: Warm the coconut oil in a small skillet over medium heat. Add the apples, maple syrup, and cinnamon. Sauté for 4–6 minutes, until the apples are tender and caramelized. Set aside.
- Make the batter: In a bowl, whisk together the flour, brown sugar, baking powder, flaxseed, hemp seeds, chia seeds, salt, and cinnamon. Add the milk, egg, and vanilla, and stir until just combined. Avoid overmixing.
- Cook the pancakes: Heat a lightly greased skillet (I used coconut oil spray) over medium heat. Pour about ¼ cup of batter per pancake and cook until bubbles form on the surface. Flip and cook for another 1–2 minutes, until golden and cooked through.
- Stack the pancakes, spoon the warm apple topping over them, and drizzle with extra maple syrup and/or yogurt if desired.
