Garbanzo Bean Salad

Ingredients
1/2 cup red onion
1-2 garlic cloves
1/4 cup pitted kalamata olives (sliced in half or quarters)
1/4 cup dried apricots (cut into quarters)
2 cups garbanzo beans
1/2 teaspoon of oregano
1/2 teaspoon of thyme
1/2 teaspoon of rosemary
2-4 Tablespoons of olive oil
1 teaspoon of balsamic vinegar
Salt and pepper to taste
Tips & Notes
While you can use canned or cooked garbanzo beans for this recipe, cooked tend to work a little better.
Directions
1. Mix all of the ingredients together in a bowl
2. Let the mixture sit for 1 hour before serving
3. Enjoy as a standalone dish or on a bed of greens
