Ideally, you will pick up the turkey and allow it to defrost in the refrigerator. Two-three days of defrosting is the optimal time frame for allowing the thin crust to dissolve, depending on the weight of the bird. If you are unable to defrost the turkey in the refrigerator, you can also place it in an ice chest with cold water or brine. Finally, it’s recommended to remove the turkey from the refrigerator and allow it to sit at room temperature for at least 30 minutes to remove the chill from the bird prior to cooking.
